Erma Bombeck famously said: “Thanksgiving dinners take 18 hours to prepare. They are consumed in 12 minutes. Halftimes take 12 minutes. This is not coincidence.” The fact that there will be enough turkey left to make hearty sandwiches after the game is not coincidence either – it’s part of the plan. For many of us, Thanksgiving is almost as much about the leftovers as it is about the meal itself. After all, it’s not every day that we roast a giant bird, so why not make the most of it – in sandwiches of course, but also in soups, salads and casseroles. If the bounty left behind includes cranberry sauce, potatoes and vegetable side dishes, so much the better. Before we can enjoy the remains of the day, however it’s necessary to store them properly.
